These numbers continue to rise as do the associated health problems and diseases.</p> <p>As governments and local communities start to feel the impact of obesity, diabetes, hypertension, etc. due to poor lifestyle choices, awareness is increasing. Cheap, processed foods are so readily available and overwhelm the shelves in supermarkets.</p> <p>Toss desk-jobs, long drives or commutes and electronics into the mix, and we do a lot of sitting around and very little to burn off that processed food.</p> <p>Americans spent about twenty-five percent of their net income on food ninety-years ago, according to a study done by RAND on why Americans are so fat. In the present day, we spend less thanten-percent of that income on food. But we’re certainly not eating less- we’re eating more, unhealthier, cheaper foods.</p> <p>But perhaps we are finally seeing a turning point. The last three quarters, McDonalds has seen a global decline of about 3.3% in sales, perhaps indicative of less consumption of fast food.</p> <p>With media covering the obesity epidemic and health and quality of life plummeting, some people are starting to see the light. Documentaries such as Fed Up are exposing food manufacturers concerns that lie only with profits and not health, and how added sugar is in over 80% of supermarket foods.</p> <p>We may be a long ways off from getting back to “the good old days” where dinner was made from whatever was in the garden and processed foods were nearly unheard of. But the best we can do is inform ourselves on why healthy choices are the best for long-term health and quality of life.</p> <p>As technology develops, our choices will only continue to grow. <p>Chicken Curry Salad</p> <p>Ingredients:<br /> ? 4 chicken breasts<br /> ? 2 cups green grapes<br /> ? 1/3 cup Paleo Mayo<br /> ? 1 heaping tablespoon curry powder<br /> ? 2 heaping tablespoons honey (or more!)<br /> ? ? cup slivered almonds<br /> ? Sea salt (to taste)<br /> ? Black pepper (to taste)</p> <p>Steps:</p> <ol> <li>Cover your baking sheet with aluminum foil.</li> <li>Set broiler on high, arranging rack so that the chicken will be about 2 inches from the heat.</li> <li>Rinse your chicken breasts and cut off any excess fat.</li> <li>Place chicken breasts side by side on baking sheets.</li> <li>Sprinkle sea salt and pepper, to taste. Place chicken in oven and broil for 14 minutes.</li> <li>Carefully flip each chicken breast, and place back in oven for it to continue to broil for another 14 minutes.</li> <li>Once chicken cools off, grab your sharp knife and cut all four chicken breasts into small squares.</li> <li>Place chicken, grapes, and slivered almonds in your mixing bowl; using your wooden spoon, mix them together.</li> <li>In a separate bowl, mix your Paleo Mayo, honey and curry powder.
